About VG10 steel

Developed by Takefu Special Steel in Japan, VG10 is a stainless knife steel valued for its sharpness, wear resistance and corrosion resistance. It can take a fine edge and hold it well, making it a popular choice for Japanese kitchen knives.

VG10 pairs lasting cutting performance with the convenience of stainless steel, while still responding well to sharpening when the edge needs refreshing. For everyday prep, that means clean slices and precise cuts without the extra upkeep associated with reactive carbon steel.

Hand wash and dry after use, and maintain the edge with a whetstone. Avoid bones, frozen foods and twisting the blade during a cut to help protect the edge.
